Slack
Hollow Farm (SHF) is a certified organic vegetable farm located in Argyle,
NY. The farm, owned by Seth Jacobs and Martha Johnson, has been using
BKI for a year and a half to make their Farmers Granola.
The recipe is based on one Martha made to eat for breakfast to get through
a busy farm morning. They source local honey, including from their own
hives, and maple syrup. The granola comes in two flavors maple walnut
and honey almond and is sold at the Troy Farmersmarket year round
and at the Saratoga farmers market in the summer. They began producing
the granola to enhance their table at the winter farmers' market in Troy.
SHF really appreciates BKI because of the convenience. The facility's
convection oven is great and when SHF needed more baking sheets to make
production smoother, the kitchen was able to purchase them. The granola
is selling well and has expanded the farms winter offerings as well
as being a value added product for their honey, which they otherwise sell
raw in jars. They have built a loyal following for their simple, delicious
product.

Processor's note:
Granola is a baked product that doesnt require a schedule process.
Some bakers at the farmers market have a home processor exemption
and can bake their products at home while other bakers need to have a
20C license and an inspected kitchen separate from their home kitchen
or rent an inspected facility like BKI. Which option is allowed depends
on what type of goods are being baked. For example a double crusted pie
often will fall under a home processor exemption while a single crusted
pie often will require the inspected kitchen.The New York State Department
of Ag and Markets sets the regulations and needs to be contacted when
a producer is thinking about selling a product.
