Good Manufacturing Practices For The Production of Acidified (Pickled) Foods - Presented by: NYS Food Venture Center Dept. of Food Science & Technology Cornell University. Hosted by: The Battenkill Kitchen, Inc and Cornell Cooperative Extension Washington & Saratoga County
Class geared towards new or established food processors.

This is a hands-on practical training designed to provide current and future small processors with the basic elements needed to understand the main processing steps, critical control points and record keeping to safely manufacture specialty food products for the marketplace. We will provide both technical information and practical training by demonstrating the production of BBQ-type sauce and pickled vegetables. See full flyer

Cooking Class of Classic Sweets with Chef Tim Holmes. Join Chef Tim Holmes of Spoonful catering for a morning of creating classic desserts: Profiteroles, Eclaires, and Schillerlocken (cream horns). Surprise loved ones when these treats become part of your repitoire. Techniques to be introduced include Pate a Choux, Pastry Cream, Diplomat Cream, and Puff Pastry. Participants can observe or fully participate and enjoy hot and cold beverages and soup along with your creations. Tim's personality lends itself to fun so come ready for a good time! The $60 class is limited to 10 participants. It will be held at the Battenkill Kitchen on the Historic Salem Couthouse grounds. Warm up your Winter -Join us for an evening and learn to create three sumptuous soups. Renown chef, Dan Spitz, will show you how to create
Celeriac Soup, Oyster Chowder and Ribollita.
Dan is the former Executive Chef of The Beekman Street Bistro in Saratoga Springs. He is excited to share his love of farm-fresh foods along with his expertise and inspired tastes. The class will begin with the creation of the soups, perfect to warm those chilly days, and the evening will end with a chance to sit and enjoy these dishes. The $50 class will be limited to 10 participants. It will be held at The Battenkill Kitchen, located at the Historic Salem Courthouse grounds. Chef Rocco Verrigni will lead an intimate BKI cooking class where attendees will learn to make 3 artisinal pastas. The chef just returned from a 6 month sabbatical in Italy where he learned to make these pastas by hand. Three sauces will be made to accompany the pasta. $50.00 .
