“Battenkill Monday’s” Cooking Classes 2015

This fall’s line-up is very exciting featuring local chef’s doing great and creative things.  Again our chefs are graciously donating their time and expertise.

 Class size is limited to only 15 students, so we are asking for payment in advance to secure your seat. 
Class cost is $40 or get all 4 Classes for $150 and save $10.

September 21, 2015 at 6PM “Let’s Go Apple Savory”
Expand your cooking skills with apple-based dishes of savory braised poultry, chutney, salad and dessert.  Perfect for this autumn’s apple season.
Be amazed as Helen McIntosh, the chef from Sweet Beet Bistro in Greenwich, NY, uses as many local products as possible demonstrating skills she learned while attending the Seattle Culinary Academy.  Helen grew up in Washington County where she has grown, foraged and enjoyed the extraordinary bounty of the local fields and forests.

September 28, 2015 at 6PM- “Home Cooked Italian” Come and enjoy traditional Italian favorites of the DiBlasi family featuring homemade soup, salad, and baked manicotti (from scratch) with Chef Dan DiBlasi and top it all of with mini cannoli’s featuring special guest Chef, Neva DiBlasi.
Dan is a home cook who has had a passion for cooking since he was a young boy growing up with his Italian family who all loved cooking.  Dan has developed a reputation for his cooking creativity and, for three consecutive years, was the head chef of our Al Fresco event.

October 19, 2015 at 6PM-“Autumn One-Pot Meals” This class will feature dishes that are all encompassing of the finest and freshest ingredients to create tasty meals that your friends and family will love and will become their fall favorites.
Featuring Chef Beth Anthony who has a degree in culinary arts and is currently the chef director for RPI’s food service.  Beth was the previous owner of Beth’s Café in Greenwich, as well as head chef for Boneyard BBQ and Catering in Greenwich.

October 26, 2015 at 6PM-“Jacko’s Favorites” To be done on-site at the beautifully restored Jacko’s Corner Restaurant in Salem, Chef Tammy Butler will lead us through the specialties’ of Panini’s, specialty soups and sandwiches, coffees, and luncheonette fare.
Chef Tammy Butler is the sole proprietor of Jacko’s Corner Restaurant where she provides a welcoming gathering place at one of Salem’s oldest treasures in a cozy and inviting atmosphere.

Since 2004, we have been committed to local foods, farmers and farming. Our 800 square-foot commercial kitchen facility has been inspected and approved by the New York State Department of Ag and Markets and is a perfect place to launch your small food business without a large capital investment. Farmers, individuals, businesses, and community organizations are welcome to use the commercially equipped kitchen to process their products for individual use, or for retail sale. We offer the kitchen for use at hourly rates, or for entire events. Come discover the value of Battenkill Kitchen for producing your specialty food product.
